# Expert Tips:

01 -
  • The texture is somewhere between fudge and truffle soft enough to melt but rich enough to feel decadent
  • That peppermint streak through white chocolate looks like you spent hours on it when really it took minutes
  • One batch makes enough for gift giving plus plenty to keep for yourself because you will want to keep some
02 -
  • Low heat is non negotiable because white chocolate seizes and turns grainy if it gets too hot
  • Work quickly when swirling the red layer because the fudge starts setting as soon as it cools slightly
  • Gel food coloring is worth the special trip to the baking aisle liquid coloring will ruin your consistency
03 -
  • Use a rubber spatula to scrape every bit of melted chocolate from the pan this mixture is too good to waste
  • Warm your knife under hot water and dry it between cuts for perfectly smooth squares
