Zesty Frozen Lemon Yogurt Popsicles (Printable)

Tangy lemon and creamy yogurt frozen into refreshing popsicle treats. Easy to make and perfect for summer cooling.

# What You’ll Need:

→ Main Mixture

01 - 2 cups plain Greek yogurt
02 - 1/2 cup fresh lemon juice (about 2-3 lemons)
03 - 1 tablespoon lemon zest
04 - 1/2 cup honey (or maple syrup for vegan version)
05 - 1 teaspoon vanilla extract
06 - Pinch of sea salt

→ Optional Add-ins

07 - 2 tablespoons finely chopped fresh mint
08 - 1/4 cup mini white chocolate chips
09 - Thinly sliced lemon rounds for garnish

# Directions:

01 - In a large mixing bowl, add the Greek yogurt, fresh lemon juice, lemon zest, honey, vanilla extract, and sea salt. Whisk thoroughly until the mixture is smooth and well incorporated.
02 - Gently fold in any desired optional ingredients such as chopped fresh mint or mini white chocolate chips until evenly distributed.
03 - Pour the yogurt mixture evenly into popsicle molds, tapping the molds lightly on the counter to release any trapped air bubbles. Insert popsicle sticks into each mold.
04 - Place the filled molds in the freezer for a minimum of 4 hours, or until the popsicles are completely firm and set.
05 - To release the popsicles, briefly run the outside of each mold under warm water for a few seconds, then gently pull the popsicle out. Serve immediately.

# Expert Tips:

01 -
  • These take barely ten minutes of active work and then the freezer does all the heavy lifting for you.
  • The combination of Greek yogurt and fresh lemon creates this incredibly creamy yet tart texture that store bought popsicles never quite capture.
02 -
  • If you rush the freezing and pull them out too early the centers will be soft and the texture will be grainy rather than silky.
  • Taste the mixture before you freeze it because once frozen the sweetness dulls slightly so it should taste just a bit sweeter than you think it should.
03 -
  • Zest your lemons before juicing them because a juiced lemon is nearly impossible to zest effectively.
  • Let the molds sit at room temperature for two minutes before running warm water over them because patience prevents cracked popsicles.
