Creepy brain-shaped crispy rice treat with gooey berry filling, ideal for Halloween celebrations and spooky-themed desserts.

# What You’ll Need:

→ Crispy Rice Brain

01 - 6 cups crispy rice cereal
02 - 3 tablespoons unsalted butter
03 - 1 (10 oz) bag mini marshmallows
04 - Red or pink food coloring

→ Spooky Berry Filling

05 - ½ cup raspberry or strawberry jam
06 - 2 tablespoons seedless raspberry or strawberry coulis

→ Decoration

07 - Additional food coloring for detailing
08 - Candy eyes or sprinkles

# Directions:

01 - Prepare a brain-shaped mold, or line a medium bowl with plastic wrap to create a brain shape.
02 - In a large saucepan over medium heat, melt the butter. Add the mini marshmallows and stir until completely melted.
03 - Tint the marshmallow mixture with a few drops of red or pink food coloring until a brain-like hue is achieved.
04 - Remove from heat and stir in the crispy rice cereal, mixing until evenly coated. Allow to cool just enough to handle.
05 - With buttered hands, press half the cereal mixture into the mold, pressing up along the sides to form a cavity in the middle.
06 - Spoon the jam and coulis into the cavity, keeping it centered. Gently cover with the remaining cereal mixture, sealing the filling inside.
07 - Press and shape the cereal gently to enhance the brain-like appearance. Let set at room temperature for 20–30 minutes.
08 - Unmold carefully onto a serving plate. Optionally, use food coloring and a small brush to add detailed brain cell ridges or highlight lines. Add candy eyes or sprinkles for extra spookiness.
09 - Slice and watch the berry filling ooze out for a delightfully spooky presentation.

# Expert Tips:

01 -
  • The moment someone cuts into it and red filling oozes out is worth every sticky finger in the kitchen
  • Kids lose their minds over the gross out factor while adults appreciate the nostalgic crispy rice treat flavor
  • It looks impossibly impressive but uses ingredients you probably already have in your pantry
02 -
  • Working with buttered hands is nonnegotiable, otherwise the marshmallow mixture will stick to everything and you'll end up with a frankenstein brain instead of a smooth one
  • The filling needs to be completely sealed inside, or you'll have jam leaking out before anyone even cuts into it
  • Gel food coloring stains everything it touches, so wear an apron and cover your work surface
03 -
  • If your marshmallow mixture starts getting too stiff to work with, pop it in the microwave for 15 seconds to soften it back up
  • Line your cutting board with parchment paper before slicing to catch any runaway filling and make cleanup effortless
